OUTCOMES
 
What will I learn in this subject? 
 
You will be provided with opportunities to prepare food to a high standard and become a confident and independent food handler.  The study of hospitality will contribute to your own health & wellbeing and you will be more able to make more informed choices about your lifestyle.  Literacy and numeracy skills will be permeate learning.
 
What skills will I have the opportunity to develop in this subject?
 
You will be provided with opportunities for developing skills for safe, hygienic and confident meal preparation. You will also develop life skills and be offered an insight into the food and hospitality industry.  All learners will also receive a certificate from the Royal Environmental Health Institute of Scotland (REHIS) in Elementary Food Hygiene.

In this subject, what types of learning activities will I be involved in?
 
A high percentage of this course is devoted to practical activities, and will appeal to those who enjoy working with food.

How will my success as a learner be assessed?

You will experience a sense of achievement when producing high quality food. Assessment is classroom based, leading to a final practical exam. There is no final written exam, as the course award comes from the practical exam. This course is delivered at National 3, 4 and National 5.

Success in this course can lead to employment or further education in catering, hotel or hospitality industries and travel and tourism.

SUBJECT:  HEALTH & FOOD TECHNOLOGY

OUTCOMES
 
What will I learn in this subject? 
 
Health & Food Technology is concerned with using and managing resources for the benefit of individuals, the family and society.  It involves the study of specialist topics like nutrition, health and contemporary food issues.  You will be encouraged to take account of, and respond effectively to, social, economic and technological change.  Learners will be given the knowledge and skills to make healthy food choices which will help to establish lifelong healthy eating habits.
 
What skills will I have the opportunity to develop in this subject?
 
Transferable learning skills.

Skills involved in the management of time, materials and resources.

How will my success as a learner be assessed?

Your performance in technological activities will be assessed as you progress through the design and make process. This technological project will be submitted to the Scottish examination board and along with an external written examination will determine the final grade awarded. It can be delivered at National 3, 4, 5 or National 6

SUBJECT:  PRACTICAL CAKE CRAFT

OUTCOMES

What will I learn in this subject? 

This course focuses on the development of practical, technical and creative skills in cake baking and finishing.  It will enable the learner to develop an understanding of the scientific nature of cake production, how to adapt basic recipes and create new flavour combinations, as well as develop and demonstrate highly imaginative and creative techniques in the design and production of a range of cakes and other baked items.
 
What skills will I have the opportunity to develop in this subject?

The Course aims to enable learners to:
  • develop technical skills in cake baking
  • develop technical and creative skills in cake finishing and other baked items
  • develop their knowledge and understanding of cake design and follow trends in cake production

acquire and use effective organisational skills in the context of managing time and resources
Achieve a certificate from the Royal Environmental Health Institute of Scotland (REHIS) in Elementary Food Hygiene. 

EXPERIENCES

In this subject, what types of learning activities will I be involved in?

The Course is predominantly a practical course that links to the growth industry of artisan bakery and confectionery. It enables learners to develop a range of artistic techniques and to consolidate them through practical activities.  This Course is designed for those wishing to acquire cake-baking and cake-finishing skills and to develop and demonstrate innovativeness in these areas. All learners will be given the opportunity to create and produce a variety of individualised products and to creatively interpret a design brief.
 
How will my success as a learner be assessed?

This Course has two mandatory Units:
Cake Baking  - produce a range of cakes and other baked items
Cake Finishing  - creatively apply finishing techniques to a range of cakes and other baked items.

To gain the award at National 5, the learner must pass both Units as well as the external SQA assessment (worth 100%) which is a practical activity which draws on the knowledge, understanding and skills developed across the course.

Success in this course can lead to employment or further education in catering particularly in the bakery industry.
